Vegan Broccoli “Cheddar” Soup with Lentils – The Daniel Fast

Hello, hello! I’m back this week with a few more recipes to help you finish this fast STRONG! Or maybe you’re just here because you want to eat super clean and if that’s you, I’m so excited for you!! Eating clean has been the biggest game-changer for me and my family and our health. And I’m constantly trying to find and create new clean meals that my family and I will love! This recipe falls into the “Love!” category beautifully.

I followed this recipe pretty closely, but I made a few tweaks.

1. I used cannellini beans because I couldn’t find white northern.

2. I put the cauliflower mixture in my food processor instead of a blender so that I could do it while it was still hot. I just kept the black squisher part off.

3. I added water because I only had half a box of the vegetable stock.

4. I added lentils for extra protein.

This soup is soooooooooooo good and satisfying! It really tastes like a thick broccoli “Cheddar” chowder! 😋 If you’re living the vegan life and wish you had some broccoli “Cheddar” soup, then you need to give this a go!!
